Foodie and the Feast

I don’t even have words for this one. This literally has every single one of my absolute favorite ingredients – potatoes, butter, bacon, caramelized onion, and cheese. I mean… I can’t even.

It must be the Irish in me that just cannot get enough of potatoes. I’m like the Pvt. Benjamin Buford ‘Bubba‘ Blue of potato lists. I like boiled potatoes, fried potatoes, french fried potatoes, mashed potatoes, potatoes au-gratin, potato salad, shoestring potatoes, baked potatoes, twice baked potatoes, home fries, breakfast potatoes, smashed potatoes, red potatoes, pickled potatoes (yup)… In my quest to find something new to do with my favorite root vegetable I came across a dish called rösti – a swedish dish composed mostly of potatoes.

2¼ pounds russet potatoes (about 3 large)
2 tablespoons canola oil
