Creamy Cauliflower Alfredo

Im already a cauliflower enthusiast. Toss in calorie free noodles and I’ll find ANOTHER way of preparing this already versatile vegetable. As I mentioned previously… I started experimenting with shiratiaki noodles. I stumbled upon a recipe for a creamy cauliflower sauce that sounded like the perfect Alfred replacement (rather than butter, cream, and flour). I LOVE creamy chicken Alfredo but I rarely eat it due to it’s fat content and lack of nutritional content. The cauliflower sauce ended up being SO much tastier than the usual bland Alfredo and is on my definite YES list!IMG_5403IMG_5409IMG_5360

Creamy Cauliflower Alfredo 

  • 1 package of shirataki fettucini  
  • 2-2 1/2 cups cauliflower florets
  • 3 cups chicken or vegetable stock (or plain water)
  • 2-3 tbsp minced garlic
  • Salt and Pepper
